The reason is simple arithmetic. On a small job, stepping from coarse to medium to fine costs a few minutes at each stage. On a floor, a deck, a hull or a tank side, every stage is measured in hours, so skipping one is tempting and doing so is expensive: the fine grade then has to remove coarse scratches over the entire area, which takes far longer than the medium stage would have and wears out more discs doing it. Large area work is exactly where the discipline of working through the grades pays back most.

Eighty grit is that middle stage. It removes the scratch pattern left by 60, levels the surface properly, and leaves something that a fine grade can finish quickly, or that is good enough to coat directly on structural and industrial work.

As with all the discs in this range, the hook and loop backing means a SANDER or POLISHER with a matching 230mm backing pad, not an angle grinder. Check the machine's rated speed against the disc, and make sure the pad supports the disc right out to its edge.

One practical point for large surfaces: overlap each pass by about half the disc, and keep the machine moving. Working in one spot cuts a hollow, and on a large flat surface a hollow is visible from across the room once light falls across it, long after the scratches would have stopped mattering.
