Beyond gripping, it does three jobs so routinely that people forget they are separate. It forms wire — bending a neat hook or eye on a conductor end so it sits properly under a terminal screw, which is a real skill and much easier with a tapered jaw. It retrieves things: a dropped screw down a gap, a washer inside a housing, a wire pushed back out of reach. And it holds small parts steady while the other hand does something to them, which is the "third hand" role that makes it indispensable at a bench.

Most long nose pliers also carry a small side cutter behind the jaws for trimming wire, so one tool grips, bends and cuts.
