Aviation snips are the standard tool for cutting sheet metal by hand, and the "left" in the name is the piece of information that decides whether this is the pair you want.
Left-cut snips are designed to cut a curve turning to the left, and the way they do it is worth understanding because it explains the whole three-tool system. As the blades cut, the waste side of the sheet has to go somewhere, and it curls away from the blades. On a left-cut pair the offcut curls to the right and downward, which keeps it clear of the blades and clear of your hand while you follow a line curving left. Try to cut a left-hand curve with a right-cut pair and the waste rolls straight into the tool, binding on the blades and forcing you to stop and lift it out of the way every few centimetres.
That is why left and right snips are not left-handed and right-handed versions of the same tool — both are used in the right hand by most people. They are for cutting in different directions.
The colour convention on aviation snips is worth knowing too, since it is near-universal: red handles for left cut, green for right, yellow for straight. Once you know it you can pick the right pair off a bench without reading anything.
The blades are chrome vanadium, heat treated — chromium for the hardness and wear resistance to keep a keen edge in sheet steel, vanadium for the toughness to resist chipping. Stainless is the lower figure because it is both harder and work-hardens as it is cut, which is a genuine limit rather than a cautious one.
