The reason is grip. A ring encircles the fastener completely and bears on all six faces, so the load is spread and the spanner physically cannot slip off sideways. That is what you need on anything tight, corroded, or already slightly rounded — which describes most of the fasteners that give trouble. An open jaw, by contrast, holds only two faces and splays under load, putting the force onto the corners of the nut and rounding them further.
